Recipe inspired by Happy Healthy Mama
I juiced 5 organic carrots last night, and used the pulp to make Carrot Cake Muffins ( posted below) and the juice I’ll be using for this smoothie. I also juice 3 red delicious apples. This generates almost 2 Cups of Carrot&Apple Juice
Ingredients
• 1 Cup Carrot&Apple Juice
• ½ Unsweetened Coconut Milk ( or Unsweetened Almond Milk)
• 1 Organic Banana ( or frozen banana)
• 1 Cup ice cubes ( use less if using frozen banana)
• 1 Tbsp Chia Seeds (or ground flaxseeds or Skinny B – MUFA)
• 1 tsp Psyllium Husk
• 1 tsp Agave ( Honey, Maple Syrup or Stevia powder or liquid)
• ½ tsp Vanilla Extract (organic – the fake stuff taste awful)
• ½ tsp Cinnamon
• ¼ tsp ginger powder ( or ground ginger or 1 inch Ginger nob)
• 1 Scoop CinnamonRoll Protein Powder (Vanilla Protein Powder works really good too)
Directions
Blend together until smooth.
Top with Cinnamon and Unsweetened Shredded Coconut. Slurp away.
Other Toppings: Shredded Coconut, granola, cinnamon, raisins, chopped pecans or toppings of preference
* I use this kind of Chia Seeds – Prana –
This is the CinnamonRoll Protein Powder I used, but Vanilla will work just as well
Blender Option
Ingredients:
• ½ Cup Baby Carrots ( or 1 large carrot chopped)
• 1 Cup Unsweetened Coconut Milk or Unsweetened Original Almond Milk
• 1 Tbsp Unsweetended Apple sauce
• 1 tsp Psyllium Husk
• 1 tsp Agave ( Honey,Maple Syrup or Stevia powder or liquid)
• 1 Organic Banana ( or frozen banana)
• 1 Cup ice cubes ( use less if using frozen banana)
• 1 Tbsp Chia Seeds (or ground flaxseeds or Skinny B – MUFA)

Toppings: Shredded Coconut, granola, cinnamon, raisins, chopped pecans or toppings of preference
Directions. Put all ingredients into a high speed blender, starting with the almond milk, and blend until smooth and silky. Sprinkle on your favorite toppings.
* If using a blender, this recipe works best with a high speed blender ( like the Vitamix) as the carrot is difficult to process. If you do not have a high speed blender, then you must gind carrots in a food processor until pulverized. Then add to the blender. ( must include this step in order to obtain a smooth silky smoothie)
